SPICED SPINACH WITH CHILI PEPPERS



Ingredients :
3 tbsp clarified butter or oil, 4 whole red chili peppers 1 onion, finely sliced
1 garlic clove, finely chopped Thumb-size piece ginger, peeled and finely chopped
1 tsp coriander seeds 1 tsp cumin seeds
1 tsp black mustard seeds
1 lb 12 oz / 750 g spinach, washed and roughly chopped
Salt and pepper

Method :
Prep and cook time: 20 min
1.     Heat the butter in a pan and gently fry the whole red chili peppers for 2 minutes or until just starting to soften. Remove from the pan and set aside.
2.     Fry the sliced onion in the pan until soft but not brown then add the garlic, ginger, coriander seeds, cumin seeds and mustard seeds.
3.     Cook very gently for 5 minutes then add the spinach. Cover with a lid and cook for 2 minutes or until the spinach is wilted and soft. Season with salt and pepper and serve garnished with the whole chili peppers.
