Ingredients :
Butter, for greasing
800 g / 3 cups cauliflower florets, rinsed
100 ml / scant 1/2 cup whipping cream 100 ml /
scant 1/2 cup milk
60g / 2/3 cup Emmental cheese, grated 2 eggs
Nutmeg
2 slices white bread, crusts removed, chopped
Salt and freshly ground pepper

Preheat the oven to 200C (400F / Gas
Mark 6).

Grease an ovenproof dish or pan with
butter.

Blanch the cauliflower florets in
boiling salted water for about 2 minutes. Drain, refresh in cold water, drain
again and place in the greased dish.

Whisk together the cream, milk,
cheese and eggs, season with salt, pepper and nutmeg and pour over the
cauliflower.

Scatter the bread over the
cauliflower and bake in the preheated oven for about 25 minutes.
