COD CURRY WITH SPINACH




Ingredients For the spinach:
3 tbsp oil
1 onion, finely chopped 2 garlic cloves, chopped 2 tsp garam masala
4 large handfuls spinach, washed and finely chopped
1 tbsp butter Salt and pepper
For the cod curry :
3 tbsp oil
1 tsp chili powder
1 tsp curcuma (turmeric) 2 tsp garam masala
1/2 cup / 125 ml coconut milk
1/2 cup / 125 ml fish broth (stock)
1 Ib 8 oz / 650 g cod, cut into chunks

Method :
Prep and cook time: 40 min
1.     For the spinach, heat the oil in wide pan and cook the onion until soft but not brown.
2.     Add the garlic and garam masala and cook for 2 minutes then add the spinach and cook very gently, stirring from time to time, for 10 minutes. Stir in the butter, season with salt and pepper. Set aside and keep warm.
3.     For the curry, heat the oil in a wide pan and fry the chili powder, curcuma (turmeric) and garam masala for 2 minutes.
4.     Pour over the coconut milk and fish broth (stock), bring to a boil and simmer for 10 minutes. Season with salt and pepper, add the cod and cook very gently for 5 minutes or until the cod is just cooked through.
5.     Serve with boiled rice.
