Ingredients
1 onion, roughly chopped 2 garlic
cloves, chopped Thumb-size piece ginger, peeled and chopped
1 red chili pepper, deseeded and
chopped
3 tbsp clarified butter or oil 1 tsp
salt
1 tsp paprika
1 tsp garam masala
1/2 tsp
curcuma (turmeric)
2 tbsp tomato paste (puree)
2 cups / 500 ml coconut milk
1 cup/ 250 ml fish broth (stock) or
water
1 lb 8 oz / 650 g large shrimps, peeled
with tail on
Salt and pepper
Cilantro (coriander) leaves, to garnish
Method
: Prep and cook time: 30 min
- Put the onion, garlic, ginger and chili pepper in a food processor and blend to make a puree.
- Heat the butter in a wide pan and add the onion mixture. Cook for 1 minute then add the salt, paprika, garam masala and curcuma (turmeric) and cook for 2 minutes, stirring all the time.
- Stir in the tomato paste (puree) then pour in the coconut milk and fish broth (stock). Bring to a boil then simmer gently for 10 minutes.
- Add the shrimps, season with salt and pepper and cook for a few minutes. Serve garnished with cilantro (coriander) and accompanied with boiled rice.
