ROMANIAN BEAN STEW




Ingredients
200 g / 1 cup dried navy (haricot) beans, soaked overnight and drained 2 onions, finely chopped, 1 garlic clove, finely chopped
100 g /1/2 cup vegetarian sausage or vegetarian bacon, finely chopped
1 tbsp olive oil, 225 g/ 1/2 Ib string (green) beans, halved
625 ml / 2 1/2 cups vegetable broth (stock)
2 sprigs fresh savory, leaves plucked Salt and freshly ground pepper Fresh herbs, to garnish

Method : Prep and cook time: 50 min
1      Cook the beans in a large pan of salted water over a low heat for about 30 minutes until soft.
2      Fry the onions, garlic and vegetarian sausage or vegetarian bacon in hot oil for 1-2 minutes, add the string (green) beans and vegetable broth (stock), cover and simmer for about 8 minutes.
3      Stir in the drained navy (haricot) beans and savory leaves and season to taste with salt and pepper.
