STIR-FRY WITH TOFU




Ingredients
225 g/1/2 Ib tofu, chopped into 2 cm /3/4 inch cubes
1 onion, finely chopped 3 tbsp vegetable oil
450 g / 1 lb broccoli, separated into florets
2 red (bell) peppers, chopped into strips
1 garlic clove, finely chopped 50 g / 1/3 cup cashew nuts 100 g / 1 cup bean sprouts Light soy sauce
Salt and freshly ground pepper

Method : Prep and cook time: 20 min
1      Fry the tofu and onion in hot oil in a skillet or wok for 1-2 minutes.
2      Add the broccoli and pepper strips and continue to fry for a further 2-3 minutes, stirring occasionally. 3 At the end of cooking time add the garlic, cashew nuts and bean sprouts and fry for a further 2-3 minutes until cooked.
3      Season with soy sauce, salt and pepper to serve.
