Ingredients :
2 scallions (spring onions) 450 g / 1 lb fava (broad) beans 2 tbsp soy
sauce
1 egg
2 tbsp bread crumbs
2 tbsp parsley, chopped
2 tbsp grated hard cheese 2 tbsp olive oil
Salt and freshly ground pepper
In addition:
200 g / 1 cup yogurt
1 tbsp whipping cream 1 tbsp lemon juice
Salt and freshly ground pepper
1 large red bell pepper, deseeded and diced, to serve
Parsley, to garnish
Method : Prep and cook time: 30 min

1 Wash, trim and finely chop the
scallions (spring onions).

Simmer the beans for about 5 minutes
in salted water, then drain and puree.

Put the beans into a bowl with the
scallions, soy sauce, egg, bread crumbs, parsley and cheese and mix well until
thoroughly combined. Season to taste with pepper.

Shape the mixture into 8 flattish
burgers. Heat the oil in a large skillet and fry the burgers for about 2-3
minutes each side, or until golden brown.

Mix the yogurt with the cream, lemon
juice, parsley, salt and pepper.

Serve the burgers on plates with
yogurt, scatter with diced red pepper and garnish with parsley.
