SPICY BEAN BURGERS




Ingredients :
2 scallions (spring onions) 450 g / 1 lb fava (broad) beans 2 tbsp soy sauce
1 egg
2 tbsp bread crumbs
2 tbsp parsley, chopped
2 tbsp grated hard cheese 2 tbsp olive oil
Salt and freshly ground pepper
In addition:
200 g / 1 cup yogurt
1 tbsp whipping cream 1 tbsp lemon juice
Salt and freshly ground pepper
1 large red bell pepper, deseeded and diced, to serve
Parsley, to garnish

Method : Prep and cook time: 30 min
1      1 Wash, trim and finely chop the scallions (spring onions).
2      Simmer the beans for about 5 minutes in salted water, then drain and puree.
3      Put the beans into a bowl with the scallions, soy sauce, egg, bread crumbs, parsley and cheese and mix well until thoroughly combined. Season to taste with pepper.
4      Shape the mixture into 8 flattish burgers. Heat the oil in a large skillet and fry the burgers for about 2-3 minutes each side, or until golden brown.
5      Mix the yogurt with the cream, lemon juice, parsley, salt and pepper.
6      Serve the burgers on plates with yogurt, scatter with diced red pepper and garnish with parsley.
