INDIAN MEAT BALLS





Ingredients :
1 lb / 450 g ground (minced) lamb 2 scallions (spring onions), finely chopped
2 green chili peppers, deseeded and finely chopped
1 tsp. chopped cilantro (coriander) leaves, plus some to garnish
Salt and pepper
5 tbsp oil
2 onions, finely sliced
2 garlic cloves, finely chopped Thumb-size piece ginger, peeled and grated
2 tsp garam masala
1 tsp coriander seeds crushed, 1 tsp cumin seeds, crushed
1 cup / 200 g canned tomatoes, chopped
Salt and pepper Couscous, to serve

Method : Prep and cook time : 45 min
  1. Mix the lamb with the scallions (spring onions), chili peppers, cilantro (coriander), salt and pepper and shape into meatballs.
  2. Heat 3 tbsp of oil in a wide skillet and fry the meatballs until browned all over. Remove from the skillet and set aside.
  3. Heat the remaining oil in the skillet and fry the onions until soft but not brown. Add the garlic, ginger, garam masala, coriander, and cumin seeds and fry for 2 minutes.
  4. Return the meatballs to the pan and add the tomatoes and about 112 cup (125 ml) of water. Simmer very gently for 20 minutes or until the meatballs are cooked through. Season with salt and pepper.
  5. Serve with couscous and garnish with the cilantro (coriander) leaves.
