CHICKEN SKEWERS WITH RAITA




Ingredients For the skewers:
1 garlic clove, finely chopped
2 tsp curcuma (turmeric)
1 tsp curry powder
2 tbsp oil
juice of 1/2 lime
4 chicken breasts, skinned and cut into chunks

For the raita:
1 cup/ 250 ml yogurt
1/2 cucumber, deseeded and chopped
2 mint sprigs, leaves chopped
1 green chili pepper, chopped
1 tsp salt
Lime wedges, to garnish

Method : Prep and cook time: 20 min plus 2 hours marinating time
  1. Mix together the garlic, curcuma (turmeric), curry powder, oil and lime juice. Mix in the chicken chunks and leave to marinate for 2 hours.
  2. For the raita, mix togther all the ingredients and set aside.
  3. Heat the broiler (grill) to a medium setting. Thread the chicken onto wooden skewers and broil (grill) for about 6 minutes, turning from time to time, or until the chicken is cooked through.
  4. Serve the kebabs with the raita and garnish with lime wedges.
