Ingredients
:
3 tbsp clarified butter or oil
2 garlic cloves, finely chopped
Thumb-size piece ginger, peeled and
finely chopped
1 red chili pepper, deseeded and finely
chopped
1 tsp garam masala
2 cups 1500 ml coconut milk
1 cup/ 250 ml fish broth (stock) or
water
20 tiger shrimps (prawns), peeled with
tails left on
juice of 1 lime
1 tbsp chopped cilantro (fresh
coriander)
Salt and pepper
Parsley sprigs, to garnish
Method
: Prep and cook time: 20 min
1. Heat
the butter in a wide pan and the garlic, ginger and chili pepper until soft but
not brown.
2. Add
the garam masala, cook for 1 min. the pout in the coconut milk and fish broth (stock)
and simmer gently for about 10 min.
3. Add
the shrimps (prawns) and simmer for minutes or until the shrimps are cooked
throu'; in the lime juice, season with salt and pepper add the chopped cilantro
(coriander).
