4 chicken breasts, skinned
1 tsp each: garam masala, ground
cumin, curcuma (turmeric)
2 tsp paprika
2 red chili peppers, deseeded and
finely chopped
4 garlic cloves, finely chopped
1 tsp. tomato paste (puree)
Thumb-size piece fresh ginger, peeled
and finely chopped
4 tbs yogurt, 1 tsp. salt, juice of 1
lemon

1 cup / 250 ml yogurt
1/2
cucumber, seeds removed and finely sliced.
2 sprigs mint, leaves finely chopped.
1 tsp. salt,
1/2
green chili pepper, deseeded and finely chopped
To serve: 4 tomatoes, chopped and
flat breads

Prep
and cook time: 20 min plus 8 hours to marinate
- Cut the chicken breasts into wide strips and set aside.
- Mix the remaining ingredients for the chicken together to make a paste and rub into the chicken slices. Cover and refrigerate for 8 hours.
- For the raita, mix together all the ingredients and set aside.
- Heat the broiler (grill) or barbecue to a medium setting. Thread the chicken slices onto wooden skewers and broil (grill) for about 3 minutes on each side or until the chicken is cooked through.
- Serve the skewers with the raita, chopped tomatoes and flat breads alongside.
