Ingredients :
3 tbsp olive oil
200 g / 1 cup cooked rice
100 g 1/4 lb cherry tomatoes,
halved 1 carrot, peeled and coarsely grated
100 g / 1 cup feta cheese, crumbled 2 tbsp freshly
chopped basil
4 red (bell) peppers, halved lengthwise and deseeded
About 100 g / 2 cups white bread crumbs
Salt and freshly ground pepper

Preheat the oven to 180C (375F / Gas
Mark 5).

Grease a baking dish with 1 tbsp of
oil.

Place the rice in a large bowl. Mix
in the tomatoes, carrot, crumbled feta and basil and season with salt and
pepper.

Spoon the filling into the pepper
halves and place in the baking dish. Scatter with bread crumbs, drizzle with
the remaining oil and bake in the preheated oven for 30 minutes until golden
brown.
