POTATO GRATIN





Ingredients :
150 g / 3/4 cup quark
150 g / 3/4 cup cream cheese
3 egg whites, beaten until stiff 2 tbsp freshly chopped parsley 450 g / 1 lb waxy potatoes, peeled and chopped into 1 cm /'h inch cubes 450 g / 1 lb kohlrabi, peeled and chopped into 1 cm /1/2 inch cubes 225 g /1/2 lb snow peas (sugar snaps), halved
225 g /1/2 lb mozzarella cheese, sliced Salt and freshly ground pepper

Method : Prep and cook time: 1 hour
1      Preheat the oven to 180C (375F / Gas Mark 5).
2      Beat the quark and cream cheese together until smooth.
3      Fold the beaten egg whites, parsley and vegetables into the quark mixture and season with salt and pepper.
Spoon the mixture into an ovenproof dish, lay the mozzarella slices on top and bake in the preheated oven for about 40 minutes. Cover with foil if the gratin colors too quickly.
