INDIAN RICE SALAD




1 cup / 200 g long grain rice
1/2  cup / 125 ml vegetable oil
4 onions, very finely sliced
2 garlic cloves, chopped
1 tsp salt, 1 tsp sugar
2 tsp black onion seeds, 8 cardamom pods
8 curry leaves Salt and pepper

Method : Prep and cook time: 30 min
1.     Cook the rice according to packet instructions.
2.     While the rice is cooking, heat the oil in a skillet and gently fry the onions and garlic with the salt and sugar, stirring from time to time, until they have started to caramelize and brown -this will take about 15 minutes.
3.     Stir in the onion seeds, cardamom pods and curry leaves and cook for 3 more minutes.
4.     When the rice is cooked, drain well and rinse then add to the onion mixture. Stir well and season with salt and pepper.
